- Frozen french green beans: Just as nutritious as fresh beans and a fraction of the cost, these are a great, budget side dish. You can use whole or cut frozen beans and don’t need to thaw before roasting. In fact, you’ll get a better crisp on the beans if you don’t thaw them first!
- Olive oil: Or any other neutral cooking oil.
- Fresh garlic: Minced or chopped finely. Substitute with ½ teaspoon garlic powder if you don’t have fresh garlic.
- Salt and black pepper
- Lemon: We’re going to use the juice and zest. Use fresh for the best flavour, but you could use frozen zest or bottled juice in a pinch.
How to Make Perfectly Roasted French Green Beans from Frozen
Some recipes will tell you to defrost or rinse the frozen green beans before cooking, but there is no need when you’re roasting them. Chuck ’em in and get cooking, I say! (And I do, because it works!).
- Preheat your oven to 400F/200C.
- Add 1 pound/450g frozen green beans to a non-stick or lined baking sheet.
- Drizzle over 1 tablespoon olive oil, and add 1 minced garlic clove. Season with salt and pepper. Toss to combine, then spread them out evenly in a single layer on the baking sheet.
- Roast in the oven for 15-18 minutes until they are cooked through and slightly browned and crispy on the outside.
- Remove from the oven, drizzle with 1 tablespoon lemon juice and 1 teaspoon lemon zest. Serve, garnished with chopped parsley if desired.

In the fridge Once cooled to room temperature, place the roasted green beans in an airtight container and keep in the fridge for up to 3 days.
To reheat Use the microwave or reheat in the oven until heated through.
