  • Pork Chops – bone-in or boneless both work, but reduce the cooking time for boneless as they cook more quickly. Put your veggies in to cook for longer before adding the boneless chops.
  • Sweet potatoes
  • Apples – any crisp, eating variety will do, such as Braeburn or Honeycrisp.
  • Red onion
  • Honey
  • Wholegrain Mustard
  • Fresh rosemary – If you only have dried rosemary, use 1 teaspoon dried in place of 1 tablespoon fresh.
  • Salt and black pepper
  • Olive oil

How to Make Baked Honey Mustard Pork Chops

Step 1 – Preheat the oven to 190°C/375°F.

Place chopped sweet potato and red onion on a large roasting tray and drizzle with olive oil, salt and pepper.

Roast for 15 minutes, until starting to soften.

Step 2 – Meanwhile, in a small bowl, mix the wholegrain mustard, honey and rosemary.

Step 3 – In a separate dish or large bowl, place the pork and chopped apple. Season with salt and pepper and pour in the honey mustard sauce. Mix to combine and leave to marinade for a few minutes.

Step 4 – After the 15 minutes cooking time for the potato and onion is complete, add the pork and apple to the oven tray and bake for a further 20-25 minutes, until cooked through.

Remove from the oven and serve.

  • 2-3 large sweet potatoes, peeled and cut into 1 inch pieces approx 900g
  • 1 large red onion, chopped into wedges
  • 2 eating apples
  • 1 ½ tablespoons wholegrain mustard

  • 1 tablespoons fresh rosemary
